The first pizzeria certified with the gas fired oven Valoriani Verace

Last 20th of March for the first time in history, the president of Associazione Verace Pizza Napoletana, Antonio Pace, consigned the first certification to a pizzeria with a gas fired oven, Thanks to the oven Valoriani VERACE, the Pizzeria 400 Gradi – Pizzaioli Veraci of Lecce is in fact able to bake pizza by respecting real Neapolitan tradition.

antonino pace 400 gradi lecceSince its official presentation in May 2014 during Pizzafestival, the oven Valoriani VERACE, patented model, represents till today the only professional gas fired oven tested and approved by Associazione Verace Pizza Napoletana. The VERACE was born a result of connection between the advanced handcraft technologies of the company in Reggello and the tests of the AVPN Pizza Masters who use Valoriani gas ovens for events. An equipment which guarantees baking times and temperatures suitable for making Real Neapolitan Pizza, even using gas instead of wood as fuel. Moreover, the CE Certification guarantees the respect of international quality and safety standards, as the gas does not produce soot in the environment thus solving problems due to new community norms about environment.

During the international show Pizza Expo in Las Vegas, from the 24th to the 26th March , the gas oven Valoriani VERACE had his debut Overseas. “ We are definitely in favour of progress and technology, just once we tested that the final features of Neapolitan pizza are not altered in the taste – declared the AVPN President -. We have already been cooperating with Valoriani company for years, to make an oven that could agree the demanding taste of the Neapolitan pizza consumer, with the growing request of using a baking method that respects the quality and safety standards required by the law in some locations. After all, our philosophy has always been to promote and defend the traditional recipe by giving space to improving processes that were able to support the spread of our culinary tradition all over the world, not altering the final features of Neapolitan pizza”.

Therefore, 2015 is an year to remember for AVPN, that makes a step forward to technological progress and new market demands requiring more quality and safety, by staying faithful to traditional feature of Verace Neapolitan Pizza. Massimo Valoriani, owner of Refrattari Valoriani, claims to be satisfied of this cooperation as well, as shown by the long lasting cooperation with the Association.
