FVR ovens still preserve the fascination of the intuition that Silvio Valoriani had 50 years ago and that led to the creation of the first prefabricated ovens for family.
There are 5 models of FVR Ovens, the differences consist in their overall dimensions and their cavity measures. The possibility to choose the most appropriate ovens, on the basis of the domestic needs, is one of the most appreciated features of this series. The smallest model can cook about 3 pizzas at a time, the largest model around 7/8 pizza.
The coking floor is made of refractory cotto, thickness 5 cm, it is composed of elements, the number depends on the oven size and it can be in white or red coking floor. The cooking chamber is composed by crown elements in refractory conglomerate, fixed joint and self bearing. A shaped area in refractory “cotto” can be used as a working floor standing in front of the oven that is equipped with an iron door for mouth closing. Finally Valoriani suggest some additional elements such as a brick arch and a pyrometer.
The time necessary to reach the temperature of 300° C changes in every model it depends on the oven size. The FVR-80 needs around 30 minutes while the FVR-110X160 60 minutes, it is obvious that woods consumption changes too. The first lighting must be done very carefully using dry wood and maintaining a low flame so to be able to keep down, at the beginning, the oven temperature: when the vault become white, it will be ready for cooking.
